Vibrant Verdant Flavors At Vinaigrette

Though I drive all over Austin all the time, I end up eating more up north closer to home. But last week I met some clients for lunch south of the river, at Vinaigrette off of South Congress. I had only been once before, a few months ago, so I was excited to go back and revisit their great menu full of delicious…salads! They are salad specialists, and have three different categories: Bright & Zippy, Savory, and A Little Sweet. The interior of the restaurant even looks like a salad—the walls are an energizing green and decorated with vegetables!
The first time, I had ordered “The Beet Goes On” (a beet salad) from the A Little Sweet section, and loved it. This time I went with “The Omega,” categorized as Bright & Zippy. Where the beet salad featured baby greens and a honey-balsamic vinaigrette, “The Omega” was one of the few lettuce salads I have enjoyed. I normally prefer spinach, kale, or arugula, but this one was chopped lettuce tossed with corn, bell pepper, tomato, avocado, and pine nuts. The cilantro on top made the taste even fresher and blue cheese vinaigrette added a tangy component. The overall tart flavor was actually light and subtle, rather than very strong like a salad with goat cheese or green apple might be.
To share with my clients, we also ordered the Black Bean & Kale Nachos. These were absolutely delicious! The tortilla chips were freshly made and the black beans were medium-spicy and savory. The avocado and cilantro cream helped balance the spice and cool things down, and rounded out the nacho with a great, smooth texture. I was in the company of French fry fans as well and we decided to try the seasonal Yam Shoestring Fries being offered. They came out thin and flat, deliciously crispy, lightly salted, and with a wonderfully full sweet yam flavor. And they were perfectly good that way, but the blue cheese dressing took them to another level! It was creamy and super savory and the perfect complement to the fries.
I definitely look forward to visiting Vinaigrette in the future to try even more of their fantastic salads.
